Grandpa's Ghetto Smothered Burritos

SHOPPING LIST:

1 PKG 8 COUNT BURRITOS ( your choice of flavor)      

1  10 OZ CAN ENCHILADA SAUCE (red or green your choice)    

1 PKG SHREDDED CHEESE     

1 CAN DICED CHILIES & TOMATOES (optional)  

TOPPINGS (optional)

16 OZ SOUR CREAM     

1 CAN SLICED OLIVES     

1 JAR PICANTE / SALSA SAUCE.   

  

  • Pre heat your oven to 350 degrees, in a casserole dish or rectangle baking pan, spray with non stick spray 
  • 1 package of frozen burritos, myself I actually get the beef & bean chimichangas, place them in the dish.
  • Next 1 small can of enchilada sauce red or green, personally I prefer the green 
  • I like tomatoes and chilis on mine but you don’t have to add if you are not partial, drain liquid from 1 can of diced tomatoes and chilies and the dump them and spread over top of burritos.
  • Next lets cheese this mother f****r up!!
  • I like a lot of cheese so for this I use the 16 oz bag of fiesta blend, but really you could use whatever your taste is. spread that out evenly.
  • That’s it, put it in the oven for 45 min to 1 hour depending how dark you like the cheese on top. I’m usually 45-50 minutes.
  • Not you may eat….oh but wait to me its best with a little topping garnish with sour cream, salsa and olives.   


ADULT BEVERAGE RECOMMENDATION: This is awesome with a Corona w Lime slice.

Grandpa's Deconstructed Chicken Cor Don Blu (ranch)

  

SHOPPING LIST:

CHICKEN BREAST

HAM

SWISS CHEESE OR PROVOLONE

CLUB CRACKERS OR RITZ CRACKERS

RANCH DRESSING ( or more traditional Blu-cheese dressing)


  • Pre heat your oven to 350      degrees, in a casserole dish or rectangle baking pan, spray with non stick      spray 
  • · Crush you crackers and put in the bottom of casserole dish, this is your crust base.
  • · Place the rinsed chicken breasts in the pan on top of the cracker crust
  • · Layer ham and cheese on top of the chicken breasts, I usually do this twice.
  • · Next with a wooden skewer or tooth picks, push into the center of each breast to hold the ham and cheese in place while baking.
  • · Season to taste and bake for 45 minutes to an hour.
  • · Plate the chicken, ham & cheese and drizzle with ranch, if you like blu cheese you could do that instead but, ew
  • · Now you may eat. This pairs nice with a tossed salad and or California mix.


ADULT BEVERAGE RECOMMENDATION: A white Zinfandel or White Merlot

Grandpa's Mexican Meatloaf

SHOPPING LIST:

1 LB GROUND BEEF

1 9 OZ PKG BEEF CHORIZO (optional)

1 JAR  CHUNKY SALSA (your choice on how spicy)

1 BAG CRUSHED TOTILLIA CHIPS

2 EGGS

1 PKG SHREDDED CHEESE


  • Pre heat your oven to 350 degrees, in a casserole dish or rectangle baking pan, spray with non stick spray 
  • In a large bowl, mix all ingredients together, it won't matter in what order, but COMBINE THROUGHLY. 
  • SAVE A LITTLE SALSA AND CHEESE.
  • Next take the meat mixture and put in your casserole pan, spread evenly then top with remaining salsa and cheese.
  • Put in oven & bake (depending how thick the meatloaf is) for 45 minutes, give or take 10 minutes.
  • Now you may eat and garnish with your choice or eat it plain to me its best with a little topping garnish with sour cream, salsa and olives.   


ADULT BEVERAGE RECOMMENDATION: Your beer of choice.


Grandpa's Air Fried or Baked Chicken

  

SHOPPING LIST:

CHICKEN (what ever pieces or meat you want)

1 box of stove top chicken stuffing

  • · Crush the stove top stuffing mix
  • · Rinse the chicken then roll in crushed stuffing crumbs
  • · Place coated chicken in the AIR FRYER or OVEN
  • · AIR FRYER: Set air fryer to 365 degrees for 25 minutes
  • · OVEN: Bake in Oven at 350 degrees for 45 minutes to an hour
  • · Remove chicken and plate. This pairs nice with tator tots, or the same stuffing mix and carrots.


 ADULT BEVERAGE RECOMMENDATION: Either your favorite Ale or Wine.

Grandpa's Peanut Butter & Bacon Sandwich

  

SHOPPING LIST:

1 LB BACON

PEANUT BUTTER (creamy or crunchy, your choice)

BUTTER  (real butter not margarine)

BREAD

  • ·  After cooking the bacon to the crispness you enjoy 
  • · Allow the bacon to cool, 
  • · Toast your bread
  • · On one slice butter it and the other apply the peanut butter
  • · Place the bacon on the peanut butter slice and top with the buttered bread. This goes well with Cheetos.


BEVERAGE RECOMMENDATION: Juice or Soda of your choice 


Hey look I know this one sounds a little strange but everyone I have ever introduced this to was amazed how good it was and asked for more. This was something my Dad used to make us on our lunch break growing up.

Grandpa's Drunk Chicken

SHOPPING LIST:

CHICKEN, LEGS, THIGHS OR BREAST YOUR CHOICE

1 LIME

1 SHOT TEQUILA

MARGARITA MIX

1 PKG AU JUS MIX

SEASONED SALT

PEPPER

CILANTRO LIME SEASONING

GARLIC POWDER

ONION POWDER

CUMIN

CAYENNE PEPPER


  • Combine    1 shot tequila, 2 cups lime margarita mix,  1 pkg au jus mix, dash of seasoned salt,  dash of black pepper,  2 dashes of cilantro lime seasoning,  garlic powder to taste, onion powder to taste,  a slight dash of cumin, and cayenne pepper to your taste.
  • I will usually combine all ingredients and pour into a zip lock bag with the chicken to marinate overnight.
  • I use my air fryer at 360 for 50 minutes or you can bake at 375 for 1 hour.


ADULT BEVERAGE RECOMMENDATION: The best is a Margarita with salt.  This pairs nicely with chips and salsa of your choice.


Grandpa's Black Forest Brownie

  

SHOPPING LIST: 

EGGS

VEGETABLE OIL

CHOCOLATE BROWNIE MIX

1 CAN CHERRY PIE FILLING.


  • Combine all ingredients as stated on the brownie mix box BUT not the cherry pie filling YET
  • Once it has been mixed, and looks like it would be ready to bake, NOW add the entire can of cherry pie filling.  Mix completely.
  • Pour mixture into greased pan and bake per instructions on brownie mix Adjust time by adding 10-15 minutes.  but keep an eye on it your oven may bake hotter than mine.

Serve how ever hot/warm you like, top with vanilla ice cream



Grandpa's Sloppy Joe Sandwich or Bake

  

SHOPPING LIST:

1 LB GROUND BEEF

1 LB OF GROUND PORK SAUSAGE

I BEEF CHORIZO

KETCHUP

MUSTARD

1 CAN DICED TOMATOES AND CHILLIES 

1 CAN CHICKEN GUMBO SOUP

ONION POWDER

GARLIC POWDER

SALT

BLACK PEPPER

BREAD/ BUNS--SANDWICH

HASH BROWNS/ TATOR TOTS --BAKE ONLY

SHREDDED CHEESE--BAKE ONLY


  • Brown hamburger, sausage and half of the chorizo and break apart.
  • Add onion powder, garlic powder, salt and pepper to taste  
  • Next add soup and tomatoes, about 1.5 cups ketchup and 1/4 cup mustard.
  • simmer for 10 minutes stirring to keep from sticking.

For sandwich  you can use any style of bread or buns.

  • For bake pre heat oven to 350,  AND  bake potato of your choice, until almost done per baking instructions.
  • Remove from oven, spoon sloppy mixture on to the top of the potatoes (as much as you want) and top with cheese
  • Bake for another 10-15 minutes
  • Remove and serve.


ADULT BEVERAGE RECOMMENDATION: Beer of your choice pairs with a tossed salad.

Grandpa's Italian Cone

  

SHOPPING LIST:

1 SMALL PKG ITALIAN STYLE MEATBALLS

1 PKG OF PEPPERONI 

1 CAN DICED TOMATOES

1 JAR PASTA SAUCE (red)

FRENCH OR ITALIAN LOAF BREAD

1 PKG MOZZARELLA CHEESE

PARMESAN CHEESE

(optional depending on your taste)

1 CAN MUSHROOMS

1 SMALL CAN BLACK OLIVES

GREEN PEPPERS

ONIONS

  • In your crockpot, combine the sauce, tomatoes, meatballs and pepperoni
  • (add additional optional ingredients as well if you wish)
  • cook on low for 4-5 hours
  • preheat oven to 350
  • Cut bread in half, NOT LIKE A SANDWICH  but in half so it look like a cone.
  • hollow out bread like a bread bowl leaving however much you like.
  • Next bake the bread for 5 minutes, just enough to get it toasted or a bit crusty
  • remove bread cone from oven,  allow to cool.
  • Next in the bottom of the cone, put mozzarella in the bottom  and fill with the mixture in the crockpot, making sure to fill to just below the top of your bread cone, 
  • sprinkle the parmesan cheese over the top and finish with more mozzarella

 

ADULT BEVERAGE RECOMMENDATION: Wine of your choice and pairs well with a tossed salad.


Grandpa's Crockpot Goulash

  

SHOPPING LIST:

1 LB GROUND BEEF

1 LB PORK SAUSAGE

1 SMALL PKG ITALIAN STYLE MEATBALLS

1 CAN DICED TOMATOES

1 JAR PASTA SAUCE (red)

1 PKG OF PASTA (your choice)

1 PKG MOZZARELLA CHEESE

PARMESAN CHEESE

(optional depending on your taste)

1 CAN MUSHROOMS

ONIONS


  • In the crock pot on low for 4 hours place ground beef and sausage to brown,  then chop up or separate.
  • Next add the sauce, tomatoes, and meatballs 
  • (add additional optional ingredients as well if you wish)
  • cook on low for 4-5 hours
  • Once you get home from work, play or whatever, boil your water and cook the pasta
  • Drain water from pasta and plate how you like.
  • Myself I  usually combine pasta and sauce together in the pot i cooked the pasta in and stir together.

ADULT BEVERAGE RECOMMENDATION: Wine of your choice and pairs well with garlic bread and a tossed salad.
